Chicken Salsa Soup

With cooler weather, it is fun to try new soups. Here is one of our new favorites. It is so simple and easy, you will wonder why you haven't made it before!

Chicken Salsa Soup

32 oz Chicken Stock (Make it easy, use one of the box stocks)
1 1/2 cups Salsa (we love Fresh Gourmet's Jack Special but you can use your favorite)
2 cans of chicken (You can use fresh, just cook it and shred it)

Saute the chicken if you use canned. Add the stock and salsa. Simmer until warm.

Toppings: we like to add a dollop of sour cream, a spinkle of cheese, and tortilla chips

Add ons: You could also add black beans, corn, garlic, onions, or even some cheese to make a cheesy chicken tortilla soup!

Hi! I just wanted to update the soup. I added half a loaf of velveeta to the soup. It made a great cheesy chicken salsa soup.
